The yarrow is beautiful and tasty. The flower has been used for medical purposes and culinary pleasure for millennia and makes for an aromatic, flowery aquavit which pairs exquisitely with autumn’s heartier ‘smørrebrød’, like our home-made seasoned rolled meat with lots of black pepper and lovage.
RECIPE: AQUAVIT WITH YARROWS
1 bottle of Brøndums Klar Snaps (70 cl – neutral aquavit, can be replaced with vodka)
2 dl yarrows (preferably flowers that have just bloomed, no leaves or stalks)
One or two spoonfuls of maple syrup to taste
Rinse the yarrows carefully and pat them dry, again carefully, with a paper towel.
Put the yarrows in a screw-top jar and pour the aquavit over them.
Close the lid, making sure that the jar is airtight.
Leave the aquavit to infuse in a dark room or cupboard for two weeks.
Filter the aquavit through a coffee filter.
Leave the aquavit to mature for about two months.
Add one to two spoonfuls of maple syrup to taste.
