Recipe – Herring of the Year 2026

Ingredients (2 people)

– 2 Årets Sild 2026 fillets
– 2 slices of good rye bread
– Salted butter
– Pickled pearl onions (homemade or from a jar)
– Fresh herbs, e.g. dill, cress or chervil
– ¼ apple, thinly sliced

Apple Compote
– 1 large sour apple
– 1 tbsp. sugar
– 1 tbsp. apple cider vinegar
– 1 tbsp. water
– 1-2 tbsp. capers

Horseradish cream
– 2 tbsp. freshly grated horseradish
– 3 tbsp. creme fraiche
– ½ tsp. sugar
– ¼ tsp. salt
– Freshly ground white pepper

Rye bread crumble
– 1 slice bacon
– ½ slice rye bread

How to do it

Apple compote

Peel the apple and cut it into small cubes. Put it in a small saucepan with sugar, apple cider vinegar and water.
Cook for about 10 minutes, stirring frequently, until the apples are tender and mash easily.
Let the compote cool completely, and stir in the capers just before serving.

Horseradish cream

Mix the crème fraîche, freshly grated horseradish, sugar, salt and pepper in a bowl.
Whisk until fluffy and season with additional salt, sugar or pepper as needed.
Set aside until ready to serve.

Rye bread crumble

Fry the bacon until crispy in a dry pan, remove and let it drip off.
Finely grate or chop the rye bread and fry it well in the bacon fat until crispy.
Chop or crumble the bacon and mix it with the rye bread. Let the mixture cool.

Serving

Afdryp sildefileterne. Smør rugbrødsskiverne godt med saltet smør.
Fordel æblekompotten med kapers på skiverne, og læg silden ovenpå.
Top med peberrodscreme og drys med rugbrødscrumble.
Fordel æbleskiver og perleløg ovenpå, og pynt med friske krydderurter.

The service level is also top class with the finesse of experience and understanding of which table you’re facing. My first visit to Kronborg.
